Vegan Cashew Butter Stuffed Dates with Chocolate

So super easy and delicious.




12 Medjool Dates

1/4 cup of your favorite nut/seed butter (I personally LOVE cashew butter)

1/3 cup crispy rice cereal

1/4 cup chocolate (I like to use Enjoy Life, because they are free of allergens)

1 tsp coconut oil


Prepare a baking sheet with parchment paper.


  1. Remove pits from dates by using a pairing knife to slice the tops lengthwise, then gently open the top half until you can pry the pit out with your fingers. Set aside.

  2. Combine the nut/seed butter with rice cereal. (If you are having a hard time mixing the butter, put in the microwave for 20 seconds to soften.)

  3. Stuff each date with about 1 tsp of mixture. Make sure it is packed tightly. Place on prepared parchment paper.

  4. Melt chocolate in a double boiler adding in coconut oil. Remove when silky and there are no lumps.

  5. Drop each date in one at a time, making sure to cover the entire date and place on prepared baking sheet. Sprinkle with a finishing sea salt.

  6. Refrigerate until set and enjoy!!
